Overview

The Bullet 21 SST is a high-performance fishing boat designed to deliver exceptional speed and agility. Although a traditional test was not conducted by BoatTest.com due to the challenges of simultaneously measuring fuel consumption and speed at high velocities, detailed performance data was gathered during Mercury Marine's private testing sessions. Powered by a new Mercury Racing 300 horsepower 4.6-liter V8 engine, the Bullet 21 SST aims to surpass the 100 mile per hour speed barrier, making it one of the fastest boats in its class.

Power and Performance

The Bullet 21 SST is equipped with the Mercury Racing 300R outboard engine, which shares its 4.6-liter V8 powerhead with Mercury's Verado, Pro XS, and other 4-stroke models but features enhancements such as shorter intake runners and a more aggressive camshaft for peak performance. This racing engine spins up an additional 200 RPM compared to standard models, expanding propeller options and overall performance. The engine offers two trim system options—a tri-ram with three cylinders and an integrated pump, or a heavy-duty version with a larger single cylinder and boat-mounted pump. Gear case choices include the Sportmaster, Torquemaster, and Heavy Duty (HD) variants, each designed for specific applications and performance characteristics. The Sportmaster, fitted on the test boat, features a crescent leading edge and low water pickups to optimize efficiency and allow higher motor installation or jack plate use. Mercury Racing propellers complement the engine, which runs on 87-octane gasoline.

Performance Testing and Fuel Efficiency

During Mercury Marine's private testing, the Bullet 21 SST reached speeds of 92 miles per hour at 6,200 RPM with one person aboard. The best cruising speed was recorded at 3,000 RPM, yielding 37.1 miles per hour with a fuel consumption of 6.9 gallons per hour and an estimated range of 242 miles. Another efficient cruise setting was 4,000 RPM at 54.4 miles per hour with a 10.3 gallons per hour fuel burn, resulting in a 238-mile range. Acceleration tests showed the boat reaching 20 miles per hour in 6.2 seconds and 30 miles per hour in 8 seconds. Subsequent propeller adjustments enabled the boat to surpass the 100 mile per hour mark, ultimately achieving 103 miles per hour at 6,247 RPM.

Exterior Design and Cockpit Layout

The Bullet 21 SST measures 21 feet in length overall with a 7 foot 7 inch beam and an estimated weight of 2,220 pounds including engine, fuel, and operator. The cockpit features two bucket seats separated by a step leading to the aft fishing deck, which includes a hatch that lifts to reveal a cooler. The dash console accommodates optional electronics and is equipped with Mercury SmartCraft multifunction digital gauges flanking a custom steering wheel. Controls for drive trim and the jack plate utilize turn signal-style switches, allowing the operator to keep both hands on the wheel. A hot foot throttle mounted on an adjustable slide enhances throttle control. Accessory switches, including those for live wells, are conveniently located near the mechanical shift and throttle controls. Forward of the port seat are rod holders, a cup holder, and a grab handle. The forward fishing area is accessible via a single step and can accommodate a portable chair. Multiple hatches provide access to insulated coolers, rod lockers, tackle storage, and the fuel tank. Pull-up cleats are mounted on the inboard side of the gunwale to prevent line snags. Engine Features and Maintenance

The Mercury Racing 300R engine is designed for ease of maintenance and durability. It features a service hatch that provides access to the dipstick, oil fill, and maintenance instructions, along with a single latch that releases all cowling locks for quick removal. The engine mounts include solid lower mounts and a hard rubber upper mount to reduce vibration. The alternator delivers up to 85 amps and incorporates idle charge management, which increases engine idle RPM to maintain battery charge for live well pumps and other electrical systems. Aesthetically, the 300R comes standard with a double red eye accent panel, with options for a graphite gray panel or a paint-ready kit for custom finishes. The engine carries a three-year limited warranty, with extended Mercury product protection available.
